INGREDIENTS

  • 3 strips bacon
  • 1 sm. onion, sliced
  • 2 tsp. cornstarch
  • 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • 1 No. 303 can green beans
  • 1 tbsp. brown sugar
  • 1 tbsp. vinegar
  • 1 hard-cooked egg, sliced

DIRECTIONS

  • Fry the bacon in a skillet until crisp. Remove and crumble the bacon. Pour off all but 1 tablespoon of the drippings. Add the onion and brown lightly.
  • Stir in the cornstarch, salt and mustard. Drain the beans, reserving 1/2 cup liquid. Pour the bean liquid into the skillet. Cook, stirring, until the mixture comes to a boil.
  • Blend in the brown sugar and vinegar; add the beans. Heat thoroughly.
  • Turn into a serving dish and garnish with the egg and crumbled bacon.
