INGREDIENTS

  • 1/2 stick butter
  • 1 28oz can peaches, drained
  • 2 1/2 cup sugar
  • 1 1/2 cups self-rising flour
  • 2 teaspoons vanilla
  • Milk, for thinning batter
  • 1 1/4 cup water
  • Heaping tablespoon cornstarch
  • For Cinnamon/Sugar:
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon, ground

DIRECTIONS

  • Preheat oven to 400°F. Melt butter in a 13x9 inch metal baking pan. In a heavy sauce pan, combine peaches, sugar, and water and bring to a boil.
  • In a small bowl, combine 3/4 cup water, cornstarch to dissolve cornstarch. Add to peach mixture; return to boil.
  • In a mixing bowl combine 1 1/2 cups sugar, flour, and vanilla. Mix well, using milk to make a thin batter; a little thinner than a pancake batter. Pour hot peaches into pan with melted butter, and pour batter over peach mixture. Top with cinnamon/sugar mixture.
  • Bake 30 minutes or until golden brown.
