INGREDIENTS

  • 1 1/2 to 2 1/2 lb. chicken, cut in halves, quarters, or as desired
  • Oil for cooking
  • 3/4 cup cream or evaporated milk
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • parsley, for garnish

DIRECTIONS

  • Heat in iron or heavy aluminum skillet enough oil or half butter and half oil, to cover half the depth of the chicken.
  • Dip chicken in cream or evaporated milk. Dredge in a mixture of well-blended flour, salt, pepper, and paprika.
  • Fry slowly until golden brown; turn and brown other side until same color and until done, 25 to 30 minutes.
  • Place on platter with sprigs of parsley and serve hot.
