INGREDIENTS

  • About 1/3 cup strong coffee
  • 4 cups firmly packed sifted confectioner's sugar
  • 1/2 cup shortening
  • 1/8 tsp. salt
  • 1 tsp. vanilla

DIRECTIONS

  • To make strong coffee, add 1/2 cup medium-ground coffee to 1 cup cold water. Heat to boiling. Remove from heat and let stand 2 minutes. Strain and cool slightly.
  • Combine sugar gradually with shortening and add coffee as needed to make a creamy smooth mixture. Add salt and vanilla. Spread on cooled cake.
  • Makes frosting for tops and sides of two 9-inch layers.
  • Mocha Chocolate Frosting: To above recipe, add 1 square (1 ounce) melted unsweetened chocolate. A little more coffee may be needed for good spreading consistency.
