INGREDIENTS

  • 1 20-oz. can red kidney beans
  • 1 16-oz. can pinto beans
  • 1/2 c. chopped green onions
  • 1 tbsp. chopped parsley
  • 1/2 c. olive or salad oil
  • 1/3 c. wine vinegar
  • 1/8 tsp. instant minced garlic
  • Salt and pepper to taste
  • Lettuce

DIRECTIONS

  • Drain the beans, then rinse and drain again. Combine the beans, onions and parsley in a bowl.
  • Blend the oil with vinegar and garlic. Pour over the bean mixture and mix lightly.
  • Season with salt and pepper and chill.
  • Serve in a lettuce-lined bowl.
