INGREDIENTS

  • 2 cups flour
  • 1 1/3 cups confectioners' sugar, sifted
  • 1 cup finely chopped pecans
  • Pinch salt
  • 1 teaspoon vanilla extract
  • 1 1/4 cups unsalted butter, softened

DIRECTIONS

  • Preheat oven to 350° F. In a medium bowl combine flour, 2/3 cup of the sugar, the nuts, and salt. Stir in vanilla.
  • Work the butter into the mixture until it forms a cohesive ball.
  • For each cookie pinch off about 1 1/2 tablespoons dough and form it into a ball, using either your hands or two teaspoons. Shape about 1 1/2 tablespoons dough into a ball. Place balls on a greased baking sheet and flatten them slightly with a spoon. Bake until lightly browned, about 30 minutes.
  • Allow the cookies to cool on a wire rack. Dust them generously with the remaining confectioners' sugar.
