INGREDIENTS

  • 1 cup long grain rice
  • 1 (8-ounce) package frozen, peeled and deveined shrimp, optional
  • 1 cup chili salsa
  • 1/2 cup chopped green pepper
  • 1 small onion, chopped
  • 1 clove garlic, minced

DIRECTIONS

  • In 12-inch skillet heat oil. Add rice; cook until golden brown, stirring frequently.
  • Stir in remaining ingredients and 2 cups water.
  • Bring mixture to boiling; reduce heat. Cover; simmer 15 to 20 minutes or until rice is tender.
  • Season to taste; serve additional salsa, if desired. Makes 6 servings.
