INGREDIENTS

  • 4 Tbls. vegetable oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 cup uncooked long-grain rice
  • 1/2 medium tomato chopped
  • 1 tsp. chili powder
  • 1 1/2 cups chicken broth
  • 2 Tbl. chopped cilantro leaves

DIRECTIONS

  • Heat the oil in a large saucepan over medium-high heat.
  • Add chopped tomatoes, with any juice and saute, stirring frequently, until tomatoes are soft; with slotted spoon remove tomatoes from pan and set aside.
  • Add onions to heated pan and saute until onions are soft and translucent. Add chili powder and stir well. Add garlic and saute, stirring frequently for about 2 minutes. Return tomatoes to pan, stir, heat through.
  • Add rice to pan and stir to coat rice with tomato, onion, garlic and chili powder mixture. Once ingredients in pan are completely heated through, add chicken broth and bring to boil. Reduce the heat and simmer, covered, about 25 minutes, adding a little stock if necessary, until the rice is tender and the liquid is absorbed. Remove from the heat, stir in cilantro and serve.
