INGREDIENTS

  • 2 tablespoons olive oil
  • 1/2 pound fresh spinach, washed, dried, and finely chopped
  • 2 tablespoons chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 pound ground beef
  • 2 tablespoons fine dry bread crumbs
  • 1 egg, slightly beaten
  • 1 can (6 ounces) tomato paste
  • 8 manicotti shells (two thirds of a 5 1/2-ounce package), cooked and drained
  • 1 1/2 tablespoons butter, softened (optional)
  • 1 to 2 tablespoons grated Parmesan or Romano cheese (optional)
  • Mozzarella cheese, shredded

DIRECTIONS

  • Heat olive oil in a skillet. Add spinach, onion, salt, oregano, and meat. Mix well, separating meat into small pieces. Cook, stirring frequently, until meat is no longer pink.
  • Set aside to cool slightly. Add bread crumbs, egg, and 2 tablespoons tomato paste; mix well. Stuff manicotti with mixture. Put side by side in a greased 2-quart baking dish. If desired, spread butter over stuffed manicotti and sprinkle with the grated cheese.
  • Spoon remaining tomato paste on top of the manicotti down the center of the dish. Sprinkle mozzarella cheese on top of tomato paste. Cover baking dish.
  • Bake at 425°F 12 to 15 minutes, or until mozzarella melts.
