INGREDIENTS

  • 1 lb ground pork
  • 1 tbsp grated fresh root ginger
  • 1 lemon grass stalk, outer layers discarded and centre part chopped finely
  • 2 tbsp sunflower oil
  • salt and ground black pepper
  • To serve:
  • juicy tomatoes, thickly sliced
  • crisp lettuce leaves
  • chilli sauce

DIRECTIONS

  • Put the pork in a bowl and stir in the ginger and chopped lemon grass. Season with salt and pepper. Shape the mixture into four burgers and chill for about 20 minutes.
  • Heat the oil in a large, non-stick frying pan and add the burgers. Fry for 3 to 4 minutes on each side over a gentle heat, until cooked through. Remove from the pan with a metal spatula and drain on kitchen paper, then serve with sliced tomato, lettuce and chilli sauce.
  • Cook's Tip: Chilling the burgers helps them to maintain their shape.
