INGREDIENTS

  • 1 cup flour
  • 1 1/4 cups granulated sugar
  • 3/4 tsp. salt
  • 12 Tbl. butter, melted and unsalted
  • 2 tsp. cream of tartar
  • 2 Tbl. all-purpose flour
  • 3 eggs
  • 3 egg yolks
  • 2 tsp. lemon zest
  • 2/3 cup lemon juice

DIRECTIONS

  • Line 8-inch X 8-inch oven proof dish with aluminum foil so that foil covers entire bottom and sides of dish and extends a couple of inches outside the dish. The foil will be used to lift the entire cookie out of the dish as a whole. Preheat oven to 350°F.
  • In a bowl, combine the flour, 1/4 cup sugar, 1/2 tsp. salt and whisk to combine well. Add 8 Tbl. melted butter and whisk to combine well and creating a thick dough. Using the back of a large spoon, press the dough to cover the entire bottom of the 8-inch dish to a uniform depth. Place dish into oven on middle rack and cook for 19 to 24 minutes or until golden brown. Remove from oven and set aside.
  • In medium bowl, combine cream of tartar, 1 cup granulated sugar, 2 Tbl. flour, 1/4 tsp. salt, 3 eggs and 3 egg yolks. Whisk to combine well. Add lemon zest and lemon juice, whisk to combine.
  • Pour egg/lemon mixture into medium sauce pan. Place pan over medium-low heat. Stir constantly to prevent eggs from curdling. Cook until mixture reaches 160°F (5 - 8 minutes). Remove from heat. Add 4 Tbl. butter and stir to dissolve butter. Strain egg mixture to remove any curdle and the lemon zest. Pour into 8-inch dish and place on middle rack of oven. Cook for 8 to 12 minutes or until egg mixture is set. Cool on wire rack for 1 1/2 hours. Lift cookie out of dish using foil. Cut into 12 bars. Enjoy!
