INGREDIENTS

  • 1 lb. bag dry pinto beans
  • 1/2 cup chopped onion
  • 1 1/2 Tbl. lard or bacon drippings
  • salt

DIRECTIONS

  • Cook the pinto beans according to package instructions until tender. (Pinto beans make a delicious side dish.) Allow beans to cool. Place two cups beans into a zip-lock bag and add 1 cup bean juice to the bag. Remove air from bag and zip to seal. Beans freeze extremely well and can be used later to make refried beans or as a tasty side dish. (1 bag is about 3 servings.)
  • To Prepare Refried Beans: Remove bag of beans from freezer. Thaw. Place beans and liquid into a sauce pan over medium heat. Add onions and stir to mix well. Allow beans/onion mixture to come to heavy simmer. Reduce heat and simmer until onions are tender and almost all liquid has evaporated.
  • Remove from heat. Using a hand-held potato masher, mash the beans and onion until relatively smooth but still with a few "chunks" of beans visible. Add lard and stir beans gently to melt lard.
  • Add salt to taste. Serve and enjoy!!
