INGREDIENTS

  • Pie crust (see Note)
  • 1/3 cup butter
  • 1/3 cup chopped onion
  • 1/3 cups sliced celery
  • 1 cup (canned) sliced carrots
  • 1/3 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 3/4 cup chicken broth
  • 1/2 cups milk
  • 1 Bone-in large chicken breast with skin on
  • 2 cups frozen mixed vegetables, thawed

DIRECTIONS

  • Pie Crust: search this site for Easy Pie Crust Dough recipe which makes a great pie crust. Eliminate the sugar and make only 1/2 of the recipe which will yield enough for a top and bottom pie crust.
  • The water used to boil the chicken breast will be the chicken broth. Fill pot large enough to hold chicken breast with enough water to cover chicken well. Bring to boil. Cook for about 20 minutes or until done. Remove chicken from broth and cool. De-bone and either chop or shred chicken as preferred.
  • Preheat oven to 425°F. Over medium heat, melt the butter in a medium sized sauce pan (pan needs to be large enough to hold all ingredients except pie crust). Add celery and onion and saute until tender. Gradually add flour, stirring constantly but gently to incorporate vegetables with flour. Slowly add broth, stirring to dissolve flour mixture. Add milk. Stir. Add mixed vegetables. Stir. Add carrots. Stir. Add chicken and stir all well.
  • Line suitable sized casserole dish with bottom pie crust. Pour chicken mixture into dish. Cover dish with top pie crust. Pinch top and bottom pie crust together to seal. Cut 6 or 7 slits in top pie crust to vent. Cook in oven for 40 - 45 minutes or until top crust golden brown. Enjoy!
