INGREDIENTS

  • 2 tablespoons chopped onion
  • 1 clove garlic, minced
  • 4 tablespoons olive or cooking oil
  • 1/2 cup rice
  • 1 can condensed bouillon
  • 4 tablespoons tomato paste
  • Grated Italian-type cheese

DIRECTIONS

  • Cook onion and garlic in olive oil until soft and slightly browned.
  • Add rice to garlic and oil. Cook over low heat, stirring constantly, 10 minutes.
  • Heat bouillon, properly diluted, and add with the tomato paste, a small amount at a time as required, until rice is done. Stir with fork to prevent sticking. Then turn heat low, cover pan and let rice steam dry. Serve with cheese.
