INGREDIENTS

  • 3 tablespoons butter
  • 1 large tomato, peeled and chopped
  • 3 tablespoons finely chopped onion
  • 3 canned mild green chiles, seeded and chopped
  • 6 eggs, beaten
  • Salsa and avocado slices, for garnish

DIRECTIONS

  • Melt butter in a skillet over medium heat and saute tomato, onion, and chiles until onion is soft.
  • Add eggs and scramble. Cook until set.
  • Serve with salsa and avocado slices.
