INGREDIENTS

  • 3 lb. medium carrots, peeled and cut into 3-in. pieces
  • 1 red chili pepper (such as fresno or serrano), halved, seeded and thinly sliced
  • 1 2-in. piece fresh ginger, peeled and coarsely grated
  • 4 T olive oil
  • Kosher salt and pepper
  • 3 T honey

DIRECTIONS

  • Heat oven to 400°F. On a large rimmed baking sheet, toss the carrots, chili and ginger with the oil, 3/4 t salt and 1/4 t pepper.
  • Transfer half the carrots to a second baking sheet. Roast both sheets until the carrots are golden brown and tender, 35 to 40 minutes.
  • Remove from oven, drizzle the honey over the carrots and toss to combine.
