INGREDIENTS

  • 2 shallots, chopped
  • 1 lb. lean ground meat
  • 2 tbsp tomato ketchup
  • 1 garlic clove, crushed
  • 1 fresh green chili, seeded and finely chopped
  • 1 tbsp olive oil
  • 14 oz. can ratatouille
  • 4 burger buns
  • lettuce leaves
  • salt and ground black pepper, to taste

DIRECTIONS

  • Put the shallots in a bowl with boiling water to cover. Leave for 1-2 minutes, then slip off the skins and chop the shallots finely.
  • Mix half the shallots with the beef in a bowl. Add the chopped parsley and tomato ketchup, with salt and pepper to taste. Mix well with clean hands. Divide the mixture into four. Knead each portion into a ball, then flatten it into a burger.
  • Make a spicy relish by cooking the remaining shallot with the garlic and green chilli in the olive oil for 2-3 minutes, until softened. Add the canned ratatouille to the pan containing the vegetables. Bring to the boil, then simmer for 5 minutes.
  • Meanwhile, preheat the grill (broiler) and cook the burgers for about 5 minutes on each side, until browned and cooked through. Meanwhile, split the burger buns. Arrange lettuce leaves on the bun bases, add the burgers and top with warm relish and the bun tops.
  • VARIATION: Set these burgers on individual plates with spicy corn relish on the side.
  • To make the relish, heat 2 tbsp oil in a pan and fry 1 onion, 2 crushed garlic cloves and 1 seeded red chilli until soft. Add 2 tsp garam masala and cook for 2 minutes, then mix in a 11 1/4 oz can whole kernel corn and the grated rind and juice of 1 lime.
