INGREDIENTS

  • 1 cup dry white wine
  • 1/2 cup sugar
  • 4 firm medium to large pears, peeled, quartered lengthwise, and cored
  • 1/4 teaspoon vanilla extract
  • 2 navel oranges, peeled and segmented
  • 2 cups seedless red grapes (or halved, seeded grapes)
  • Custard Sauce (search recipes)

DIRECTIONS

  • In a 2-quart saucepan combine wine and sugar. Bring mixture to a boil over high heat, stirring until sugar dissolves. Add pears to wine mixture. Cover, reduce heat, and simmer, turning pears occasionally to cover with liquid, until they are just tender when pierced with a fork (6 to 8 minutes).
  • In blender or food processor combine 6 of the pear quarters, 2 tablespoons of the poaching liquid, and vanilla. Whirl or process until pureed. Pour into a shallow, oval 6-cup gratin pan or baking dish.
  • Slice remaining cooked pears and arrange in puree in baking dish. Add orange segments and grapes. (If done ahead, cover and refrigerate for up to 6 hours; remove from refrigerator about 30 minutes before serving.)
  • Shortly before serving, prepare Custard Sauce, preheat broiler; pour sauce evenly over fruits. Broil about 4 inches from heat until top begins to brown lightly (3 to 4 minutes). Serve at once.
