INGREDIENTS

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 cup mashed fully ripe bananas (2 to 3 bananas)
  • 1 egg
  • 1/4 cup buttermilk
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

DIRECTIONS

  • Combine sugar, shortening, bananas, egg, and buttermilk in a mixing bowl; beat well.
  • Blend remaining ingredients, add to banana mixture, and mix until blended (about 1 minute).
  • Turn into a greased 9x5x3-inch loaf pan.
  • Bake at 350°F 45 to 50 minutes, or until done.
