INGREDIENTS

  • 1 lb. mild Italian sausage, without casings
  • 3/4 lb. ground beef
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 28 oz. can crushed tomatoes
  • 2 6 oz. cans tomato paste
  • 13 oz. tomato sauce
  • 1/2 cup red wine or water
  • 2 Tbl. sugar
  • 1 1/2 tsp. dried basil leaves, crushed
  • 1/2 tsp. fennel seeds
  • 1 tsp. Italian seasoning
  • 1 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 4 tsp. chopped fresh parsleyh
  • 12 lasagna noodles
  • 16 oz. ricotta cheese
  • 1 egg
  • 1 lb. mozzarella cheese
  • 3/4 cup Parmesan cheese, grated

DIRECTIONS

  • In a large pot add sausage and ground beef. Turn heat to medium. Stir meat to brown. Drain meat in colander if necessary to drain any grease. Place empty pot back on heat and add onion, stirring to sauté. Add garlic and stir. Do not allow garlic to brown. Add crushed tomatoes and stir to mix well. Return the meat to the pot and stir to mix well. Add tomato paste, mix well. Add tomato sauce, mix well.
  • Add wine, sugar, basil, fennel, Italian seasoning, 1 tsp. salt, pepper and 2 tsp. parsley, stirring to mix well after each addition. Cover pot, reduce heat to simmer and simmer for 1 1/2 hours, stirring occasionally. While meat sauce is cooking, slice mozzarella cheese into 1/8-inch thick slices. Time noodles to have noodles cooked just before meat has finished simmering. Drain noodles in a colander and rinse with cold water to stop cooking.
  • Preheat oven to 375°F. In a bowl, combine ricotta cheese with egg, 2 tsp. parsley, and 1/2 teaspoon salt.
  • Spread 1 1/2 cups of meat sauce into bottom of 9-in x 13-in casserole dish with high sides. Lay 6 noodles length way over the meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices covering entirely. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
