INGREDIENTS

  • 2 cups sliced, peeled fresh peaches or nectarines
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1 3-ounce package cream cheese, softened
  • 1/2 teaspoon ground ginger
  • 1 to 2 tablespoons milk
  • 3 cups torn mixed salad greens
  • 1 cup chilled fresh raspberries
  • 1/2 cup chilled fresh blueberries

DIRECTIONS

  • Place peach slices in bowl; toss with sugar and lemon juice. Cover and refrigerate about 1 hour.
  • Drain peaches, reserving syrup. Cover peach slices and refrigerate.
  • To prepare dressing, add cream cheese and ginger to reserved syrup; beat till smooth. Stir in milk till dressing is desired consistency. Chill.
  • Place salad greens in salad bowl. Arrange peach slices, raspberries, and blueberries atop greens. Serve with dressing.
