INGREDIENTS

  • 12 slices bacon, diced and fried until crisp (reserve 6 tablespoons drippings)
  • 3 medium-sized onions, chopped (2 cups)
  • 1 cup less 2 tablespoons cider vinegar
  • 1 1/2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 to 3 lbs. potatoes, cooked, peeled, and cut in 1/4-inch slices

DIRECTIONS

  • Heat bacon drippings in a skillet. Add onion and cook until tender, stirring occasionally. Stir in vinegar, sugar, salt, and pepper; heat to boiling. Mix in bacon.
  • Pour over potato slices in a serving dish and toss lightly to coat evenly. Garnish with snipped parsley and paprika. Serve hot.
