INGREDIENTS

  • 20 cloves fresh garlic
  • 1 tablespoon olive oil
  • 1/3 cup mayonnaise
  • 1/3 cup coarse ground mustard
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1 (6- to 8-pound) standing rib roast
  • aluminum foil
  • 1 cup whipping cream
  • 4 tablespoons prepared horseradish

DIRECTIONS

  • Preheat oven to 375°F. Place garlic in small baking pan and drizzle with oil. Bake 20 minutes, stirring occasionally, until tender. Cool 5 minutes.
  • Reduce heat to 350°F. Place rib roast, bone-side down, on rack in baking pan. Process garlic, mayonnaise, mustard, parsley, salt and pepper in food processor until smooth. Spread over top and sides of roast.
  • Roast 20 minutes per pound or until internal temperature reaches 140°F (for medium rare). (Tent loosely with foil if topping becomes too brown.) Remove from oven, cover with foil and allow roast to stand 10 minutes; temperature of roast will rise slightly.
  • Beat whipping cream, in mixing bowl, with electric mixer until soft peaks begin to form. Stir in horseradish. Slice roast and serve with horseradish sauce
