INGREDIENTS

  • 1 package active dry yeast
  • 1/4 cup warm (105° to 115° F) water
  • 1 tablespoon honey
  • 2 3/4 to 3 cups flour
  • 3/4 teaspoon salt
  • 2/3 cup warm (105° to 115° F) milk
  • 1 tablespoon salad oil

DIRECTIONS

  • Sprinkle yeast over the warm water in a measuring cup. Add honey. Let stand until soft (about 5 minutes). In food processor bowl fitted with steel blade, combine 2 3/4 cups flour and the salt; whirl to mix. Stir warm milk and oil into yeast mixture.
  • With processor running, pour yeast mixture through feed tube in a steady stream. Adjust the amount poured so flour can absorb it. Process until dough forms a ball. Turn off processor. Dough should feel barely sticky. If too soft, add some of the remaining 1/4 cup flour, 1 tablespoon at a time, just until dough feels soft, smooth, and satiny. Knead by processing for an additional 20 seconds.
  • Shape dough into a ball. Turn dough in a greased bowl. Cover with plastic wrap and a towel; let rise in a warm place until doubled in bulk (45 minutes to 1 hour). Punch dough down and shape into a loaf. Place shaped loaf in a greased 4 1/2 - by 8 1/2-inch loaf pan. Let rise until almost doubled in bulk (30 to 45 minutes).
  • Preheat oven to 375° F. Bake until loaf is well browned and sounds hollow when tapped (35 to 40 minutes). Remove loaf from pan and let cool on a wire rack.
