INGREDIENTS

  • 1 1/2 lb. chicken breast, skinless, boneless
  • 4 14.5oz cans chicken broth, unsalted
  • 8 cups water
  • 1/2 medium onion, chopped (1/4 in. size)
  • 1 tsp. poultry seasoning OR Italian seasoning
  • 1 Tbl. chicken bouillon granules
  • 1/2 tsp. black pepper
  • 1 tsp. garlic powder
  • salt, to taste
  • 1 14.5oz stewed tomatoes, diced
  • 24 oz diced frozen vegetables, carrots, corn, green beans, etc.

DIRECTIONS

  • Cut chicken breast into 1 inch cubes. Note: this recipe makes about 1 gallon of soup. Place appropriate size pot on medium-high heat.
  • Add chicken broth and water to pot. Bring to boil. Carefully add chicken breast cubes, stirring well. Return to boil. Reduce heat to simmer. Add onion and stir well. Cook for about five minutes. Stir well.
  • Add all ingredients except tomatoes. Stir well. Return to boil. Reduce to vigorous simmer and cook until vegetables are tender, about 20 minutes.
  • Once vegetables are tender, add tomatoes. Cook to heat through. Taste soup for saltiness. Add salt and pepper to taste. Serve! (Soup freezes very well.)
