INGREDIENTS

  • 1 pound small green beans, ends removed
  • 6 small red potatoes, quartered
  • 1/2 cup Oil and Vinegar Dressing (search recipes)
  • 2 tablespoons cilantro leaves, chopped
  • 1 tablespoon capers
  • Green leaf lettuce

DIRECTIONS

  • Place potatoes in a steamer and arrange green beans on top. Cover tightly and steam until barely tender (approximately 15 minutes). Do not overcook.
  • Place vegetables in a bowl and mix with the dressing. Chill 3 hours.
  • Just before serving mix in the cilantro and capers. Line a platter or individual plates with lettuce leaves and arrange vegetables on the lettuce.
