INGREDIENTS

  • 1 lb. chicken cut into 1-inch chunks
  • 1/4 cup cornstarch
  • oil for frying chicken
  • 1 Tbl. minced ginger
  • 1/2 tsp. red pepper flakes
  • 2 cloves garlic, minced
  • For Sauce:
  • 3 Tbl. rice wine vinegar
  • 3 Tbl. soy sauce
  • 2 tsp. hoisin sauce
  • 1/4 cup water
  • 3 Tbl. sugar
  • 1 Tbl. cornstarch

DIRECTIONS

  • (A wok is ideal for cooking this dish, however, a large skillet will work as well.) The chicken chunks are easily coated with 1/4 cup cornstarch by placing all in a plastic bag and tossing to coat well. Heat about 5 Tbl. oil in the wok. Once oil is hot, add chicken and toss to cook. Chicken does not have to brown to be done. Once done, remove chicken and set aside.
  • In a bowl, combine and mix well all items for the sauce. Stir well to ensure the cornstarch and sugar are dissolved.
  • If necessary, add enough oil to wok to cook the ginger, red pepper flakes and garlic. Add the three to the hot oil and stir to cook. Cook until garlic is fragrant.
  • Return the chicken to the wok. Once wok has returned to temperature, add the sauce and stir to mix well. The sauce will thicken and coat the chicken. Once thickened, remove the chicken from the wok and serve over noodles or rice.
