INGREDIENTS

  • 4 eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon grated lemon or orange peel (optional)
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • Cooking oil for deep frying
  • Honey
  • Cinnamon

DIRECTIONS

  • Beat eggs; stir in buttermilk, vanilla extract, and grated peel. Combine flour and baking powder. Stir into the egg mixture. Cover with a cloth. Let stand at room temperature for 1 hour.
  • In a deep fryer, heat oil to 375°F. Drop batter by the tablespoon. Cook 4 minutes, or until doughnuts are golden brown. Drain on paper towels. Drizzle with honey and sprinkle with cinnamon. Serve hot.
  • Note: Batter keeps well in the refrigerator. Bring to room temperature before cooking.
