INGREDIENTS

  • 1 pound blue crab meat, fresh, frozen or pasteurized
  • 6 tablespoons butter or margarine, melted
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 1/4 cup mayonnaise or salad dressing
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped parsley
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons grated onion
  • 2 teaspoons cream-style prepared horseradish
  • 1/2 teaspoon liquid hot pepper sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 1 tablespoon melted butter or margarine
  • 1/4 cup dry bread crumbs
  • Paprika

DIRECTIONS

  • Thaw crab meat if frozen. Preheat oven to 350 degrees. Remove any remaining shell or cartilage.
  • Melt 6 tablespoons butter in a l-quart saucepan; blend in flour. Gradually add milk and cook, stirring constantly, until thickened. Add mayonnaise, lemon juice, parsley, Worcestershire sauce, onion, horseradish, liquid hot pepper sauce, salt, pepper and nutmeg; blend well.
  • Combine sauce and crab meat. Spoon mixture in 6 well greased ramekins or shells. Combine 1 tablespoon butter and bread crumbs; sprinkle over top of crab meat. Sprinkle with paprika.
  • Bake at 350 degrees for 20 to 25 minutes or until golden brown.
