INGREDIENTS

  • 2 lbs of hamburger meat, lean
  • 2 cans (10oz. each) Ro-Tel tomatoes with chilies, drained
  • 1 can Ranch style beans, drained
  • 2 packages Mexican style cornbread
  • 1 can cream style corn
  • Shredded Cheddar cheese, or cheese of your choice

DIRECTIONS

  • Brown hamburger meat and drain. Add Ro-tel tomatoes and Ranch style beans. Simmer 10 minutes.
  • Make cornbread batter per directions. Add creamed corn to cornbread mixture. Add shredded cheese to mixture; mix well.
  • Pour half of the cornbread mix in the bottom of a large skillet, pour meat mixture on top of cornbread mixture. Top with more cheese.
  • Pour remaining cornbread mix on top.
  • Bake at 350°F until cornbread is done or tooth pick inserted into the center comes out clean.
