INGREDIENTS

  • 2 eggs
  • 2 cups buttermilk
  • 3 tablespoons shortening, melted
  • 1 1/2 teaspoons salt
  • 2 1/2 cups cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

DIRECTIONS

  • Beat eggs until light. Add buttermilk and melted shortening; mix well.
  • Mix dry ingredients together. Add to egg mixture; beat until smooth. Pour into a greased 9-inch square baking pan.
  • Bake at 375°F about 25 minutes. Serve hot.
