INGREDIENTS

  • 2 frying chickens
  • 2 tablespoons butter or margarine
  • 2 large onions, sliced
  • 2 tablespoons flour
  • 6 tomatoes, sliced
  • 3 green peppers or pimientos, chopped
  • 1 clove garlic, chopped fine
  • 1 sprig thyme
  • 1 sprig parsley, chopped
  • 1 bay leaf
  • 2 cups chicken consomme or stock
  • Salt and pepper
  • Cooked rice

DIRECTIONS

  • Cut up the chickens into frying pieces. Season well with salt and pepper. Melt butter in a large saucepan; add chicken and brown on all sides.
  • Add onions and brown lightly, then sprinkle with flour and mix well.
  • Add tomatoes, peppers or pimientos, garlic, and herbs. Simmer for 20 minutes. then add the hot consomme which has been highly seasoned with salt and pepper. Simmer for, 45 minutes.
  • To serve, put pieces of chicken on a hot platter and cover with sauce. Serve with boiled rice. Serves 6.
