INGREDIENTS

  • 3 tablespoons butter or margarine
  • 1/4 cup flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 2- to 2 1/2-pound frying chicken (cut into pieces)
  • 4 green onions, chopped
  • 1/4 pound mushrooms, cut into quarters
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/3 cup apple juice
  • 2 medium tomatoes, diced (or 2 whole canned tomatoes, drained and diced
  • 2 tablespoons chopped parsley and chives

DIRECTIONS

  • Heat butter in heavy skillet. Mix flour, salt, pepper, and thyme in a paper bag. Shake pieces of chicken in seasoned flour mixture and brown thoroughly in butter in skillet.
  • Add onions and mushrooms. Cover and simmer 3 minutes.
  • Mix lemon juice, sugar. salt. and apple juice and pour over chicken. Cover and simmer 5 minutes. Add tomatoes.
  • Cook slowly over low heat about 1 hour or until chicken is fork tender. Sprinkle with parsley and chives. Serve hot. Serves 4 to 5.
