INGREDIENTS

  • 1/2 pound boneless chicken breasts, cubed
  • 1 egg
  • 3 tablespoons flour
  • 2 teaspoons sugar
  • 2 teaspoons light soy sauce
  • 2 teaspoons dry sherry
  • 1/4 teaspoon salt
  • 1 1/4 cups rice vermicelli

DIRECTIONS

  • Place chicken cubes in food processor container. Add egg, flour, sugar, soy sauce, sherry, and salt. Process until smooth paste forms, then transfer mixture to bowl. Cover with plastic wrap and chill for 20 minutes.
  • Form mixture into 18 balls. Finely crush vermicelli. Roll each ball in vermicelli until well coated.
  • Heat about 1 inch of cooking oil in wok or frying pan. Fry 6 chicken balls at a time for 3 minutes, or until golden and thoroughly cooked. Drain well and serve warm with soy sauce or sweet chili sauce.
