INGREDIENTS

  • 1 cup cottage cheese
  • 2 tablespoons sugar
  • 3 tablespoons flour
  • 1 egg yolk
  • 2 teaspoons grated orange rind
  • 1/4 cup dried currants (optional)

DIRECTIONS

  • Press cottage cheese through a strainer or food mill two or three times, until it is fairly smooth, or simply whirl for several seconds in a food processor.
  • Add the sugar, flour, egg yolk, orange rind, and currants (if used) and mix thoroughly.
