INGREDIENTS

  • 1 1/2 pounds medium to large shrimp
  • 5 tablespoons butter
  • 3 cloves garlic, pressed
  • Pinch mild powdered chile, unseasoned
  • 1 tablespoon fresh lime juice

DIRECTIONS

  • Peel shrimp, leaving the tail for a handle. Remove vein.
  • Melt the butter in a small pan. Add garlic, chile, and lime juice. Simmer 1 minute.
  • Dip each shrimp in garlic butter and place on skewers (the double prong type of skewer will keep the shrimp flat). Broil over hot coals, basting with the remaining garlic butter, turning once and cooking only until pink (approximately 3 minutes).
  • Take care not to overcook the shrimp or they will become tough.
