INGREDIENTS

  • 1 small head of cabbage (1 pound)
  • 2 carrots
  • 1 1/2 cup chicken stock or broth
  • 5 peppercorns
  • 1 (1 pound) can of corn, drained
  • 1/2 teaspoon salt
  • 2 teaspoons soy sauce
  • 4 hard-boiled eggs

DIRECTIONS

  • Remove wilted leaves and cut the cabbage in strips. Pare the carrots and cut in slices.
  • Bring the chicken stock and peppercorns to a boil.
  • Add the cabbage and the carrots and boil, partially covered, for 15 minutes.
  • Add the corn and simmer until hot, about 5 minutes. Season with salt and soy sauce. Serve with egg halves. Garnish with chopped parsley, if desired.
