Broiled Steak Satay with Pineapple Recipe marinades steak strips in soy sauce, sherry, salad oil, onion and garlic then basts while grilling with an orange marmalade and cayenne mixture and serves garnished with sesame seeds.

INGREDIENTS

  • 1 1/2 to 2 pounds top round steak, - 3/4 inch thick
  • 1/3 cup soy sauce
  • 3 tablespoons dry sherry
  • 2 tablespoons salad oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced or pressed
  • 1/4 cup orange marmalade
  • 1/8 teaspoon cayenne pepper
  • 1 small pineapple (about 2 lbs)
  • 2 tablespoons sesame seed, toasted and ground (see Note)
  • Plain, unflavored yogurt
  • Lime or lemon wedges

DIRECTIONS

  • Cut steak into 6 long strips, each about 3/4 inch wide. For marinade, mix in a bowl the soy sauce, sherry, oil, onion, and garlic. Place steak strips in bowl. Cover and refrigerate 1 to 2 hours.
  • Shortly before serving, preheat broiler. Whirl marmalade in blender with about 2 tablespoons of the marinade and all the cayenne. Peel pineapple, then quarter and remove core; cut in about 12 long wedges. Remove steak from marinade and thread strips on 6 metal or bamboo skewers, weaving skewer in and out of meat lengthwise to give a serpentine effect. Arrange skewers on rack of broiler pan. Broil 3 to 4 inches from heat until well browned on first side (4 to 5 minutes).
  • Turn skewers and arrange pineapple wedges around them; brush meat and fruit generously with marmalade mixture. Continue broiling- turning pineapple once and brushing again with marmalade mixture- until meat is browned to taste and pineapple is lightly browned. Sprinkle meat with ground toasted sesame seed. Serve with hot broiled pineapple. Set out unflavored yogurt and lime or lemon wedges to add at the table.
  • Note: To toast and grind sesame seed, spread 2 tablespoons sesame seed in a shallow pan and bake in a 350° F oven until lightly browned (8 to 10 minutes); cool slightly. Whirl in small blender jar, or crush in a mortar, until powdery.
