INGREDIENTS

  • 3 large ripe tomatoes
  • Salt
  • Freshly ground pepper
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon sesame oil or walnut oil
  • 2 1/2 pounds lean beef sirloin steak, boneless, cut in thin slices
  • 2 bunches green onions, cut in 3/4-inch pieces
  • 1 tablespoon light soy sauce
  • 2 tablespoons dry white wine
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt

DIRECTIONS

  • Slice each tomato into 4 slices horizontally. Sprinkle with salt and pepper. Bake on a cookie sheet at 325°F until hot (about 15 minutes).
  • Heat vegetable and sesame oils in a wok or skillet until hot but not smoking. Add meat, stirring to coat pieces. Cook 1 minute. Add green onions. Cook and stir 1 minute. Mix soy sauce, wine, sugar, and 1/2 teaspoon salt; pour over meat. Cook and stir until meat is done (about 3 minutes).
  • Overlap 2 tomato slices at the side of each serving plate. Arrange meat mixture on plates, partially covering tomatoes.
  • Note: Sesame and walnut oils can be purchased in specialty or gourmet shops. These oils have a delicate but distinct flavor which provides an interesting accent in this recipe. The oil can be omitted, or vegetable oil substituted.
