INGREDIENTS

  • 3 tablespoons light brown sugar
  • 1/4 teaspoon dry mustard
  • 1 cup soy sauce
  • 1/2 cup water
  • 3 tablespoons dry sherry
  • 1/4 teaspoon Tabasco
  • 1 tablespoon grated onion
  • 1 clove garlic, minced
  • 1 1/2 to 2 pounds beef sirloin, cut in 1 1/2 inch cubes
  • Tomato wedges
  • Green pepper squares (about 1 to 1 1/2 inches)
  • Small onions, peeled

DIRECTIONS

  • Mix brown sugar, mustard, soy sauce, water, sherry, Tabasco, onion, and garlic in a bowl. Place meat in glass baking dish, pour marinade over beef, and allow to marinate in refrigerator overnight. Remove meat and reserve marinade.
  • Alternate meat and vegetables on skewers.
  • Place kabobs on grill about 5 inches from hot coals. Brush generously with marinade. Grill 7 to 10 minutes, then turn and baste with more marinade. Continue cooking until meat is done as desired.
  • Note: The beef often requires a longer cooking period than the vegetables. If desired, place all beef on 2 or 3 skewers, and place all vegetables on other skewers. Place vegetables on grill towards end of cooking time of beef. Meat and vegetables may be rearranged on skewers for serving.
