INGREDIENTS

  • 1/2 recipe Danish Pastry Dough (search recipes)
  • 1 egg beaten with 1 teaspoon water
  • 1 cup Date, Poppy Seed, or Nut Filling (search recipes)
  • For Icing:
  • 1 1/2 cups confectioners' sugar
  • 3 tablespoons water
  • 1/4 teaspoon vanilla extract

DIRECTIONS

  • Roll dough on a lightly floured surface into a rectangle 12 by 16 inches. Cut lengthwise into 3 strips, 4 by 16 inches, then cut each strip into four 4-inch squares. Brush edges of each square with some egg mixture. Place about 1 tablespoon of filling in the center of each, spreading it slightly down toward bottom and across center.
  • Fold top half of dough down to cover filling and press edges firmly to seal. Make about seven 1/2-inch cuts at long, sealed edge of each rectangle, spacing cuts about 1/2 inch apart. Gently bend each rectangle into a curve, so cuts open slightly, forming claws. Place about 2 inches apart on baking sheets. Cover with a towel and let rise until almost doubled in bulk (about 45 minutes or a little longer).
  • Brush each pastry with some of the remaining egg.
  • Preheat oven to 400° F. Bake until puffy and well browned (about 12 to 14 minutes). Transfer the bear claws to racks to cool and brush each with a little Icing while still warm.
