INGREDIENTS

  • 1 5-pound stewing chicken, disjointed
  • Salted water
  • 1 cup sifted flour
  • 2 tablespoons soy sauce
  • 2 beaten eggs
  • 2/3 cup milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • Fat or oil for frying

DIRECTIONS

  • Put cleaned chicken in kettle and cover with salted water. Bring to boil. Cover and simmer until tender, about 1 1/2 hours. Drain and reserve broth for other uses. (Chicken can be cooked a day ahead.)
  • To make batter, combine remaining ingredients except oil and beat with rotary beater until well blended.
  • Melt fat to depth of 1 1/2 inches in large, deep, heavy skillet. Heat oil to 370°F. on frying thermometer, or until a l-inch bread cube browns in 1 minute.
  • With tongs, dip each piece of chicken in batter. Fry in oil until golden brown on all sides. Drain on absorbent paper. Serves 6. Note: Bones can be removed from larger pieces before dipping in batter.
