Basted and Baked Zucchini Slices Recipe cuts zucchini into 1/4 inch slices and then bastes them in a mixture of melted butter, basil, thyme and garlic before baking them in creating this tasty baked zucchini recipe.

INGREDIENTS

  • 3 medium zucchini
  • 2 Tbl. butter, melted
  • 1 tsp. ground basil
  • Pinch ground thyme
  • 1 clove garlic, minced

DIRECTIONS

  • Preheat oven to 350°F. Cut a small sliver off one side of a zucchini so it will sit flat on a cutting board.
  • Carefully slice each zucchini lengthwise into 1/4 inch slices. Place the slices onto a baking pan which has been sprayed with cooking spray or lined with parchment paper.
  • Combine the other ingredients and stir to mix well. Baste both sides of each slice of zucchini with the butter mixture.
  • Place the baking pan of zucchini into the heated oven on the middle rack. Bake for 10 minutes. Turn the zucchini slices over. Cook for 5 more minutes. Serve and enjoy.
