INGREDIENTS

  • 4 1-inch thick bone-in pork chops
  • 2 Tbl vegetable oil
  • 1 Tbl ground cumin
  • barbecue sauce

DIRECTIONS

  • Place oil in a large oven proof skillet over medium-high heat. Once oil begins to shimmer, add pork chops individually to the skillet. Move each chop around to prevent the chop from sticking to the skillet. Repeat process until all chops are in the skillet.
  • Preheat oven to 270°F. Allow chops to brown on one side, then turn each chop to the other side to brown.
  • When chops are browned, sprinkle the chops with the cumin. Cover the skillet with a tight fitting lid or cover tightly with aluminum foil.
  • Place the skillet with the chops onto the middle rack of the oven. Set a timer for 30 minutes. However, check the temperature of the chops at about 15 minutes in the oven. If the chops are at 170°F remove from oven, slather with barbecue sauce and serve.
