INGREDIENTS

  • 1 Pâte Brisée recipe, chilled (search recipes)
  • 1/2 pound sharp American Cheddar cheese
  • 4 eggs, lightly beaten
  • 1 cup each whipping cream and half-and-half
  • Salt and freshly ground black pepper to taste
  • Nutmeg and cayenne pepper to taste
  • 1/4 cup chopped chives

DIRECTIONS

  • Preheat oven to 350°F. Use Pâte Brisée to line 24 two-inch tartlet tins. Chill 30 minutes.
  • Cut cheese into 1/8-inch cubes. In a small bowl combine eggs, whipping cream, half-and-half, and salt, black pepper, nutmeg, and cayenne to taste.
  • Divide cheese cubes among tartlet shells and top with cream mixture. Bake tartlets until well browned (12 to 15 minutes). Cool slightly, then garnish with chopped chives.
