  • 2 or 3 Tbl. minced onion or 2 or 3 green onions
  • 1 garlic clove
  • 1 can cream of potato soup
  • 1 soup can of water
  • 1/2 or 1 soup can half and half or coffee cream or milk
  • Black pepper
  • butter or oil
  • dill weed, optional
  • parsley flakes, optional


  • Saute onion and garlic (mince garlic or press garlic in garlic press) in butter or oil until onions are tender.
  • To onions, add can of cream of potato soup and soup can of water. Add half and half. Stir to mix well.
  • If you have left over mashed potatoes, stir them into soup. Add black pepper to taste. Heat until bubbly.
  • Ladle into soup bowls and sprinkle with a bit of dill weed or parsley flakes. Serve alone or with grilled cheese sandwiches. Make generous portions for two.
