INGREDIENTS

  • 2 lb mutton or lamb
  • 6 medium potatoes
  • 6 medium carrots
  • 6 small onions
  • 1 small yellow turnip
  • 3 sprigs parsley
  • 2 tsp salt
  • 1/4 tsp pepper
  • 3 tsp sugar
  • 2 Tbl flour

DIRECTIONS

  • Cut mutton into 1-inch cubes; place in saucepan. Cover with cold water. Bring to a boil.
  • Peel and quarter potatoes; slice carrots into 2-inch pieces. Peel and quarter onion; dice turnips. Add vegetables, parsley, salt, pepper and sugar to boiling mixture.
  • Cover tightly. Simmer for about 2 hours and 30 minutes.
  • Blend flour into 1/2 cup water until smooth. Stir flour mixture into stew; cook, stirring constantly, until thickened. Cook for about 15 minutes longer, stirring frequently.
